Squash Apple Bake
- This recipe has always been a favorite at my holiday table. It was passed down from my Aunt Robin, who received it from a friend. This recipe always reminds me of fall with it’s combination of creamy acorn squash and fresh apples.
- Serves: 10 people
- Prep. Time: 1 hour
- Cook Time: 30 minutes
- Tools: large glass baking dish, food processor, large sauté pan, large zip lock bag, spatula
- INGREDIENTS
- Squash layer
- 2 acorn squash
- 1 tablespoon brown sugar
- 4 tablespoons buttery sticks
- 1/4 teaspoon kosher salt
- Apple layer
- 6 tart apples, peeled, cored and cut into ½ inch thick slices
- 4 tablespoons buttery sticks
- 1/3 cup sugar
- ¼ teaspoon cinnamon
- ½ cup raisins (optional)
- Crunchy topping layer
- 3 cups corn flakes
- 1/2 cup pecans, chopped (delicious, but optional)
- 1/2 cup brown sugar, firmly packed
- 2 tablespoons buttery sticks, melted
- DIRECTIONS
- 1. Preheat oven to 400º.
- 2. Cut the acorn squash in half with a serrated knife and remove seeds. Place them flesh side down in the baking dish, add 1 cup of water and bake until the squash is soft and tender, approximately 1 hour.
- 3. Once the squash has cooled, peel off the skin and add the flesh to the bowl of your food processor with the brown sugar, buttery sticks and salt. Puree until smooth.
- 4. While the squash is baking, make the apple layer.
- 5. Place the sauté pan over medium heat and add the apples, buttery sticks, sugar, cinnamon and raisins. Saute the apples until tender but not mushy, about 10 minutes. Remove from heat.
- 6. To make the topping combine the corn flakes, pecans, brown sugar and margarine in a zip lock bag and shake.
- 7. To assemble: Add the apples in one layer to the bottom of the baking dish. Spread the squash mixture on top of the apples. At this point you can cover and place in the refrigerator for up to two days or the freezer for up to 3 months.
- 8. 30 minutes before serving bring the casserole to room temperature, preheat the oven to 350º and sprinkle the topping over the squash layer.
- 9. Bake in the oven uncovered for 30 minutes until warmed and lightly browned.
